Do You Know Beans?



While I looked through my vintage magazines and on Pinterest this weekend, I came across quite a few recipes that had beans.  Not the usual bean recipes at all, let me assure you.

I know that many of us who are frugal are too well aware of how they are a great budget booster. They are a wonderful source of many vitamins and minerals, fiber, proteins.  They are terrific for extending meals and if both beans and rice are combined in a meal you have a complete protein source without having to serve meat.

I thought I'd share these with you:

From February 1948 American Home magazine:

Bean Sausage

4 cups cooked pinto, navy, or black-eyed peas
1/2 tsp sage
Dash of red pepper or Tabasco
2-3 tablespoons flour
1 teaspoon salt

Drain and mash beans.  Mix with the remaining ingredients.  Shape into flat cakes and fry in bacon fat until well browned.  Makes 12 cakes.  224 calories per cake.



I found the following on one of the Pinterest pages.  It wasn't even listed as a vegan recipe in the pin, merely a budget recipe.  I'm sure it's that!

Vegan Marshmallow Cream


You'll be shocked that this dish is made of chickpea broth...Seriously.  Doesn't it look good.  I'm tempted to try it just because it's one of those things we'd typically pour out and throw away. Just click on the link (the underlined title above the picture) and see for yourself.

The marshmellow cream was such a shock. ha

My mom use to fix a recipe close to the bean sausage recipe.. It was delicious.
it was:
pinto beans [mashed up]-drained of juice
egg yolk
small amount of flour [to make it hold together]
chopped onions
spices
shredded cheddar cheese [if she had it/if not -- no cheese]
Fry them.
then if she had sour cream, she would put a spoon on top
she also put a spoon of picante sauce/if she had it.

These were delicious , and we never complained about not having meat.
It was a very filling recipe for our family of 6.

The chick pea liquid recipe is crazy! I rarely open a can of them since I am the only one who likes them but it is tempting to give that a try today.
