Holiday Menu Plan - Fa La Lala la


I'm just this side of Bah Humbug...Pfffttt!  I don't feel well doggone it and it's making the coming holidays a thing of stress when they oughtn't be at all.  I don't dare try to drive even so far as town, as my right leg will go numb or cramp badly.  John has promised to take a bit of time Tuesday morning to drive me.  We'll do banking, stop by the local grocery, the dollar store where I'm desperate to find any sort of gift at all for at least two people on my list and the flea market, though that is more for appearance's sake than anything.  I'll try to take in a handful of items to fill any empty spaces, but I don't feel up to spending lots of time at it and that's a fact.  Bah Humbug!



Honestly at the moment, keeping up with last week's menu was about all I was up to doing and here we are with a new week and I've about as much desire to plan meals as I have to dance a jig.  I'll manage a holiday meal for two just fine, no fear there, but it's the rest of the week has me stumped at the moment.  Watching a special Christmas marathon of Chopped is not helping either, for all meals I can imagine making are just so so compared to the sumptuous foods these chefs are coming up with for a holiday meal. Bah Humbug!

Well Phooey on Bah Humbug!  Regardless of circumstances, the house is decorated; the pantry and freezer is well stocked; I can even, with a bit of thought figure out this whole gift thing without a lot of fuss if I dig about just a bit. There's prepared cookie dough in the freezer, that just needs to thaw and I can bake  a few treats. It's not by any means the 'perfect' holiday but it's still Holiday!  Oh and I got busy this morning while I was feeling fairly well and got the Christmas card list knocked right out.  John took them off to mail tonight with nary a word about my tardiness in starting them this late. They will arrive during this holiday season.  Ha!  Take that you ol' Christmas Blues! 

Chicken and Rice Soup, Cheese, Cracker and Fruit Plate
This soup of mine has gone through more manifestations in the past week as I've worked with this chicken meat... And I've still got it on my menu as I simply haven't had enough meals to get it on the table. Well I've finally decided it shall be chicken rice and it will incorporate the leftovers of the Chicken Fried Rice since there's just under a serving of that entree left.  Leftovers of soup will do superbly well for supper one night this week.

I have a modest supply of fresh fruit on hand, which will go well with crackers and cheese: grapes, clementine and apple.

 *note:  hot and muggy today, with the AC coming on as early as 8am...I decided soup just wasn't the thing at all.  I'll put that broth and meat and the leftover fried rice into the freezer.  We had frozen entree from the freezer (Cheesy Ravioli Bake) along with a salad and buttered bread.  

Quiche, Oven Fries,  Carrot and Raisin Salad
I've plenty of eggs and I've finally mastered a fairly decent pastry crust.  It uses cooking oil instead of shortening but it comes out lovely and flaky each time I make it.  I'll do a half sized Quiche.  Even though we love the leftovers, I just don't want to fill up the fridge with too many extras.

Hunter's Beef Stew, Coleslaw, Cheddar Garlic Biscuits
I'll use some of the roast in the freezer to cut into stew meat.  Along with the usual potatoes, onions and carrots this stew has a tomato sauce base, a nice change from the usual stew. 

Stuffed Mushrooms, Steaks, Baked Potatoes, Green Salad with homemade Croutons and Gorgonzola Dressing, Chocolate Chip Cheesecake
Well after all it is Christmas!  I'm hoping I can find decent mushrooms in town.  If not, I'll make a Butter Sauce to go over the steaks perhaps.

Fried Chicken with cream gravy and biscuits, Mashed Potatoes and Green Beans
It should be cooler by this point of the week.  Oven Fried Chicken will make a nice hearty meal and warm the house at the same time.

Patty Melts, Spicy Cabbage Salad, Chips,  Beer
I don't know what the weekend will be like...So I've decided to keep meals simpler. 

Smoked BBQ Turkey Sliders, Potato Salad, Pickles 
The sandwiches are in the freezer, just need to be heated to eat.  I'll make John's favorite potato salad to go along with them.

Girl I am with you- I am trying to keep my holiday spirit! We are scheduled to close on our house in 12 days and move 3 days later.All this packing and would you believe all this rain today, we have a big leak in our roof- grrr. And we are going out of town for 5 days. Blah! Well I hope you get to feeling better soon. I keep up the mantra that this too shall pass and I want to remember the reason for the season! Sorry you're not feeling well! Are you getting enough magnesium?

I couldn't believe that I had to have the AC on last night and even this morning it was hot and muggy!

Your meals sound delicious, but not very easy on a recovering body! As in there seems to be lots of standing, prepping, etc. Why don't you put your crockpot to use and let it do most of the work for you? (((Hugs))) Hope you feel better soon!

Terri, it has been forever since I have logged in to any blogs! I am so very happy to see you still have this blog. I won't miss a day from here on out.

That said, I pray you are feeling better and have got thru your blahs. I will be starting a new blog (when I get home from work, the work computer just won't allow it) and hope that it's interesting enough for you to want to follow.
