The Homemaker Plans Meals: Freezer Clean Out Version

I made time this morning to dig through my baskets of meats in the freezer and today I have pulled out several things for this week's meals.  I won't share dates on some of these items because frankly, I am shocked at how long some of these meats have languished.  What I have out today is not all of what needs to be used up either! I didn't want to pull too much out at once.

So what's on my menu for this week?

I had planned to make one thing tonight and posted it on my blog, but now I'm rethinking that because the sausage is a fairly 'new' item, bought in the past month.  I'd rather use some of these older things first.

Pork Chops with Mustard Glaze, Creamed Cabbage, Green Beans with Potatoes, Stuffing

Venison Backstrap, Twice Baked Potatoes, Asparagus.  This is the very last bit of venison in my freezer.  I don't know why I've held on to this for so long since it's a small piece of meat that cooks quickly.  I think because it's a bit of a luxury cut, very tender, and like steak.

Chicken and Dumplings (I add vegetables to mine so it's like a thick soup), Pumpkin Pie.  The pie is from the freezer, made back at Thanksgiving.  The chicken is a package of bone in breasts with four in the package, so at least two meals off this.  I'll probably have a bit of chicken left to make chicken salad for lunches with as well.

Lasagna, Salad, Italian Beans, Garlic Bread

Fried Chicken, Coleslaw, Mashed Potatoes and Gravy, Biscuits.  I seldom fry chicken, but every now and then I like to do so and treat John to the fact that I am a Southern-born, country woman, raised to fry chicken at home.
