The Homemaker Plans Her Meals: Cool Down



We're getting some relief from the high temperatures this week.  Saturday was almost autumnal with mild temperatures, slow rain, and hardly any AC running.  It was lovely!  No, I'm not rushing summer along.  I actually enjoy it, even when it's really hot, but I do prefer temperatures on the milder side, and I appreciate the break for the electric bill.  Who wouldn't?!   

I want to use my oven while it's a little cooler.  I think a lovely roasted chicken would be wonderful to have on hand this week.  We've enjoyed homemade bread, but neither of us cares for the odd shaped loaf that comes from the bread machine.  And I'd really like to get some bagels made this week.  I bought the last, but they don't even compare to homemade ones.  I'll try to do a double batch because odds are the very hot weather is going to return.  We've all of August, September and October to go before we get much relief from hot weather.


I'm not going to share breakfast plans for this week.  I haven't been following the menu at all for breakfast.  I just make whatever John has hinted he'd like or that I want instead.  

Lunch:  

Grilled Cheese Sandwiches

Pizza (taking advantage of the cool down spell)

Grinder Salads

Out with Katie

Soup and PBJ's

Roast Beef Sandwiches

Chicken Salad Sandwiches


Dinner:

Pot Roast with Vegetables, leftover Corn Pudding

Choice of Leftovers

Roasted Chicken, Baked Potato, Broccoli, Peaches

White Bean and Tuna Salad, Toast Points, Plums

Chicken, Black Bean, and Pumpkin Enchiladas, Mexican Rice (use leftover rice), Green Salad

Beef Lo Mein, Egg Rolls, Fruit Salad

Chicken Enchilada Soup, Corn Muffins, Pineapple Salad

Yesterday I spatchcocked a whole chicken and cooked it on the grill. I had to look up how to do it, but after watching a video, I managed fine. No heating up the house and it came out delicious. It's a good alternative to oven-roasting a chicken in the summer.

I don't know why it did not occur to me that someone living in Georgia wouldn't know how to keep cool while mowing! I did look up Frogg Tog after what you wrote and will order a chilly pad to keep the husband cool while mowing. Thanks for the comment!

Just a reminder that you can avoid heating up your house by using your pressure cooker or Instant Pot (on pressure setting) whenever possible. Yesterday I wanted potato salad but was not anxious to heat up the house boiling potatoes. Then I thought of my very old pressure cooker. I went online and learned that small potatoes (or larger ones cut in half) will cook in 3 minutes at 15 lbs. pressure. Let cool naturally for 3 minutes then finish releasing the pressure with cold water. They were perfect! You can cook a lot of other veggies under pressure, too.

Should add: it was 104F yesterday in northern Idaho! Fortunately, humidity is not an issue west of the Rockies. Also, I used russet potatoes (you know the size) from a 10 lb. sack. If your spuds are much bigger, cook for 4 minutes and don't forget to cut them in half.

Your meals always sound so good. I have been wanting to cook a pot roast. It is perfect in the crockpot on a hot day! Stay cool!

We've had a similar cooldown here and it's been so nice. I really must be extra tired today because I read that one lunch item as Soup and PJs. LOL
