The Homemaker Plans Meals: Less Not More

 


Hello everyone.  I have done a pantry and freezer inventory and know what I have on hand.  I also have sorted out the fridge.  I actually did that Friday evening because I wanted to make room for drinks to chill overnight before packing them on ice for after the wedding.  I discovered then that we needed to cook nothing this past weekend.  We simply ate the food we already had.  I did not complain about getting a break from preparing meals!  It was a most welcome break.  I love to cook, but there are times I get very weary of it.


That said, one thing I am weary of having to think about and prepare each day is breakfast.  It ought to be the easiest meal of the day but it's not.  If I'm going to make a meal, John wants a 'big' breakfast.  He's not a toast and coffee sort of man.  I, on the other hand, could be quite happy with just that, but alas, I need protein to balance the carbs and help keep blood sugars stable.  

Obviously, the solution here is to plan and prepare ahead.   I can either plan the next day as we go and cook as I'm making lunch or dinner for the day then simply reheat the next day OR I can make several meals at once and portion them out over the week.  The only thing I really need prepare fresh the day of is egg, scrambled or fried.  

Breakfast:  

Sausage and Egg Cups, Toast. xs2

Toast with Peaches and Peanut Butter, Cereal for John, Yogurt for me xs2

Bagels with Bacon, Egg and Cheese.  (I'll check the carb count on the ones I just bought. I may just eat half a bagel).

Peach Muffins x 2, with some type of egg (boiled or omelet).


Lunches:

Leftovers x2

Tuna Salad (Plate for me, sandwich for John)

Low Carb Buffalo Chicken Wraps

Open Faced Meatloaf Sandwich

Southwestern Chicken Salad

Bologna and Cheese sandwich (John), Salad with bologna and cheese for me


Snacks:

Wheat crackers and Hummus

Corn Chips with Salsa and Cream Cheese x2

Celery and Peanut Butter x2

Deviled Eggs and Toast Points x2


Dinners:

Leftovers x2

Meatloaf, Italian Peasant Vegetables, Tomato and Lettuce Salad

Taco Salad, Mexican Chocolate Pudding

Sweet and Sour Pork, Rice, Broccoli

Fried Chicken Legs, Potato Salad, Tomato Sandwich

This is sort of what my menu plan has looked like lately - trying to use up stuff that's just sitting there combined with me eating less carbs than Brad or eating different veggies than him. But it's paying off. I had my follow up appointment with the nutritionist last week and I've lost 5.6 lbs in 4 weeks so I'm pretty excited about that!

And yes, the constant thinking of food and meals and all it involves does get old, doesn't it? I love cooking too but my goodness I get tired of all that goes into the lead up to the cooking part.

Karla, Congratulations! I know how hard it is to plan two meals for the most part and then feel that it's all a lot of trouble. Worth it in the end.

We do more of a sausage patty sandwich, or fried boneless pork chop sandwich. Hubby will eat a ham or turkey wrap at times for bfast. The eggs, bacon, potatoes meals are usually our suppers. LOL
