The boys had a conversation in the car the other day. Isaac declared his deep desire to go to the beach. Yes, he's mentioned that before. Josh began a recitation of their daily schedule if they should go to the beach. "Have breakfast, go to the beach. Go back to the room, have lunch, rest. Go back to the beach and then out for a late supper and then..." Isaac protested immediately, "Hey wait a minute!! What about snacks?" Josh and I both chuckled. I said to Josh, "You know Isaac..." and Josh said, "Yeah. He doesn't want to miss out on any opportunity to eat!" Isaac is slender but he has, from the beginning of his life, been one who can and will eat. He's the least picky of all the children and the one who is perpetually hungry. A day at the beach would surely generate a greater need of sustenance. Josh quickly amended his vacation day itinerary to include snacks twice a day.
I have more of a challenge in summer to think of meals I want to eat. I want good food, but nothing too heavy. I don't want a ton of salads. I still like a nice hot meal at least once a day. But I don't mind a bit of something cool and refreshing either.
I'm lowering my budget this month by $40. I'm doing this because things will be a bit more snug than last month.
I'm also challenging myself to make smaller meals and include a daily snack. Yes, I'll take a note from Isaac's book...Lighter meals at midday do leave me a bit bottomed out most days well before supper time arrives. So, I'm going to plan a snack time into our day. Just a little something to help me over that hungry spell and allow me to eat a little lighter meal at supper because I'm no longer starving.

Grilled Flanken Steaks and Country Style Ribs, Corn on the Cob, Sliced Tomatoes, Baked Beans, Pub Fries, Red, White and Blueberry Ice Box Cake. Flanken steak are a very thin sliced horizontal cut short rib steak that is popular at a Korean restaurant we occasionally enjoy eating at. It's typically marinated in a Teriyaki sauce and grilled, which is how we shall cook ours.
Italian Chicken Breast, Broccoli, Rice Pilaf. I plan to grill the chicken on July 4th. The rice will be made up of any leftovers of rice or vegetables from the week behind.

Gosh I'm going to add some of your ideas to my meal plans to pull from as well. I have my first follow up visit with my nutritionist this week. I met with her for the first time a month ago. She encouraged me to add snacks to the afternoons since I tended to be "starving" by the time dinner came around. In addition to adding way more veggies to my meals than I was having in recent years, that afternoon healthy snack has made a huge difference. It turned out I wasn't eating enough during the day! I would often skip breakfast and then have just a salad at lunch (in the hopes of a slim down) but then by dinner I was starving for not-so-healthy versions of carb-loaded foods and sweets. That snack has made a huge difference.
I do love fruit spritzers. I finally invested in a SodaStream machine and we are loving it. In the past 2 months I've only had 2 real sodas and 1 was a treat my daughter brought me. I realized I love the bubbles of soda and so now I have purchased the little sugar free "to go" flavor packets and we add those to our carbonated water. It's delicious! I find it almost too sweet so I'm likely going to start using only 1/2 a packet in each bottle.
My family really likes cut-up veggies with ranch dip for snacks. About the only thing you haven't stuffed the celery with is peanut butter. I lovelovelove peanut butter with everything! Also, we like taco chips with salsa, too. Oh, now I'm making myself hungry!

Max, I LOVE peanut butter with celery too. I never ate it until I was older (like in my 50's) but I think it is a great combination.
Karla, I haven't made a single spritzer yet this week. Perhaps tomorrow? Good intentions but no follow through here on the snacks. Yet, I know it would benefit me. Sigh.
