I don't have job plans this week. I'm taking some time out to do what I'd like: read, ramble to my heart's content and rest. I'll be back next week with a bigger than usual job plan because that week I mean to take another week off from blog writing, reading and computer in general after the meal/job post and knuckle down to a double time pace and get a few of these projects wiped off my list. I think it's a great way to end one quarter and begin another don't you? I think I feel a pantry challenge coming on for June as well, so let's get prepared for that and stock up on dairy for the month. I am planning to purchase mostly produce this week and extra dairy. I'll use next month's budget to fill in holes in our pantry/freezer food storage.
I realized the other day that I make my life a lot harder than it need be in failing to plan out breakfasts and suppers as well as our main meals each day. Mind you we do eat pretty much the same thing for both those meals on a rotating basis but I don't always have ingredients on hand to make the usual selections. Just like planning dinners, planning those other two meals HELPS. Since school is about to let out I thought perhaps if I planned out my breakfasts and suppers it might help you as well. So a-planning we will go!
breakfasts this week:
Cold Cereal with Peanut Butter Toast, Apple Slices
Eggs, Grits, Toast, cantaloupe
Applesauce Nut Muffins, Cream Cheese, Orange slices
Pancakes, Maple Syrup, Turkey Bacon, Juice
Western Omelet, Hash browns, Toast
Biscuits with Sausage, Apricots
Bagels with Cream Cheese, Bananas
Dinners:
Steak, Baked Potato, Asparagus, Salad, Cheesecake
Why so glam? Anniversary that's why! 20 years this week and hence the big push to take a whole week for fun stuff. John will be right along for the fun, never fear.
Red, Black and Blue Salad, Hot Fudge Sundaes
Leftover steak will mix with a gorgeous Romaine lettuce, tomatoes, and blue cheese crumbles. I'll serve some nice crusty bread along with the salads and we'll top off the meal with sundaes.
Grilled burgers and hot dogs, Buns, Fixins', Chips, Ice cream Sodas
Do you get the impression that we're splurging a little this week? We aren't really. I just needed to purchase a few items. The rest were on hand or easily made here at home.
Vegetable Lasagna, Green Salad, Crusty Bread, Tiramisu for Two
I made this main dish last week and popped in the freezer. Makes for an easy meal for us if we want to spend the day out doing something.
Frankfurters with Baked Beans, Coleslaw with pineapple, Corn on Cob, Butterscotch Sundae
I expect to have leftover hot dogs and I'm determined to make good use of the half gallon of vanilla ice cream! A single scoop each for a few days won't even begin to empty that carton...
Cowboy Supper, Corn Muffins, Salad with Corn Salsa, Cheesecake Pops
Leftover hamburger, baked beans make up this dish and leftover corn mixed with a bit of lime zest, garlic, tomatoes and a bit of jalapeno will make up a tasty salad, I think. Leftover cheesecake formed into balls, frozen on popsicle sticks and then dipped in melted chocolate chips will make a tasty dessert.
Baked Chicken, Potatoes with Green Beans, Sliced Tomatoes, Corn Muffins, Peach Cobbler a la Mode
The last meal of the week and a grand finish to what I hope is going to be a very fun week altogether.
Suppers:
Cheese Tray, Crackers, Fresh fruit tray, Adult beverages
A lighter supper for us after a heavy dinner but we inevitably want something. At Bess' baby shower last week there was the most refreshing not sweet sort of dressing for the fruit served. It was plain yogurt with a bit of fresh lime zest. Oh my! So lovely. I think it would be a nice dip for our fruit tonight.
Fresh Tomato soup, Grilled Cheese Sandwiches
Twice Baked Potato, Green Salad (using leftover potato)
Cold Cut Sandwich, Chips, cantaloupe
Turkey Wraps, Carrot Sticks
Leftover Soup, Cheese and crackers

Chicken Sandwiches, Veggie platter with Ranch dressing
That should do us...probably be more than too much so I'll cut out a meal or two and save to serve next week but I'd rather plan hearty and eat light than to plan light meals and find we want to eat hearty!

I could sure use a pantry challenge here. I have too much in my freezer and some canned goods that need using too. With just the 2 of us using up food takes a while. I liked Brenda's idea of going through all the canned things that are getting close to date and setting them aside so you can quickly look in that box and plan meals around them. We have always had a pretty big pantry and since the kids are gone it lasts so much longer. We need to pare down. Used to be with layoffs and seasonal slow downs with my husband's work we used that pantry to keep us going. Now in retirement the income is steady and it is not needed as much and should also be littler in size. I would never want to have no pantry though. I love shopping my pantry too and knowing if I want to try a new recipe I probably have the ingredients at home already. This week we had some sickness here and that was nice not having to go out at all as everything we needed was here already. Thanks for the weekly input of ideas. There is always something I learn here and I enjoy it so. You two enjoy that lovely steak! :-) Sarah
