Meal Plan for the Fourth Week of September: From Scratch

 


My goal coming into this week was to have little to no leftovers, no gathered fragments.  Just to see if I could be better at planning quantities/portions for us.  Well, I do have a bit of leftovers to deal with this week despite my best efforts.


Gathered Fragments:

Corned Beef and Broth

various pickled things...not urgent that we eat these.  Just a reminder to self that they are there.

To Make:

Graham Oatmeal Cookies.  I have an open box of grahams that aren't being eaten.  I haven't made this particular recipe in years.  You make an oatmeal topping with caramelized sugar to go on the crackers.  Then you drizzle with chocolate.  I have to find the recipe in my files.

Bread

Sandwich fillings: chicken salad, egg salad

Meals:

We picked up KFC on our way home.

Chicken Noodle Soup, Meatloaf Sandwiches.  The soup was expired.  I opened both cans, followed John's ex-wife's advice and added in some parsley, onion, celery (all powdered stuff) and a dash of pepper.  It was pretty good!  I'm glad to have two more cans of expired foods off my shelf.  I need to get back to work on this...but NOT this week...This is my QUIET week.

Chicken, Rice Pilaf, Steamed Broccoli with Cheese sauce

Steak, Baked Potato, Salad with Blue Cheese dressing.

Chicken in a Mixed Greens Salad with Pears, dried cranberries, walnuts and Blue Cheese, (I like a raspberry vinaigrette with this), Crusty Bread. And if we're particularly hungry that night I'll have a dessert.

Pork Chops, Sour Cream and Chive Mashed Potatoes, roasted Brussels Sprouts.

Pumpkin and Chicken Enchiladas, Mexican Rice, Green Salad.  The Enchiladas are in the freezer so this will be an easy to make meal.  I basically only have to cook rice.

Shopping List:

Whole Chicken I actually bought this last week on sale.

Pears.  I haven't seen a pear in market...Did I miss the season?  If I can't find pears I'll sub in apples, which I already have on hand.

Brussel Sprouts  Same as with the chicken...grabbed it on sale last week.

Broccoli.  My shopping list has gotten very short, hasn't it? lol.

I also used some graham crackers this weekend for a dessert. It was super simple and no-bake. It's peanut butter bars, which end up tasting similar to a peanut butter cup. Very tasty. I'll definitely make them often in the future.

You mentioned on one of your other posts about not caring for Alfredo sauce. I love Alfredo sauce but I'm super picky about it. I do not like the jarred kind at all. It tastes nothing like Alfredo to me. I do enjoy restaurant type and my own homemade version and sometimes the Bertolli refrigerated version is ok. Makes me want some chicken broccoli alfredo pasta right about now. :)

Congratulations to Katie and all of your family on the new addition!
What a blessing. Thank you for the menu inspiration, I'm running dry on ideas for our menu planning these days. For variety, I try to rotate types of meals, with a Mexican/Spanish meal and an Italian meal each week interspersed between the BC meals. I am glad the weather is cooling a bit so I can start to implement my soup and salad dinners and our roasts with gravy from time to time! Take care!

We're having beef and noodles tonight using two T-bone steak bones that both had quite a bit of meat left on them.
One night we'll have baked chicken and vegetables sheet pan dinner, and one night will be cheese ravioli with sage/walnut pesto and some chicken sausages from the freezer.
I think we'll do cheeseburger sliders or big mac tacos on Friday.
Saturday will be sandwiches on the way to the hockey game for Bradley's birthday. I imagine we'll split some snacks at the game.
Sunday will be Brad's birthday supper of cheese enchiladas, and instead of a cake, he's requested chocolate pecan pie.

hello Terri, we like to make sandwich cookies with leftover frosting and graham crackers. The crackers soften and I know it sounds weird but they are delicious.
I really like the fall theme fairy garden you should a post or 2 back. We already have a summer fairy garden and I'm in a ‘buy no junk’ mindset so I’ve been looking on pinterest for ideas for things to make to switch mine to Autumn things. Jackson helped me paint some old wood spools orange to make pumpkins today after school. Thank you for the idea. I’d never heard of such.

Rhonda I haven't made those graham cracker frosting sandwich cookies in ages! My favorite has always been cream cheese frosting.

Karla for years we ate them as an accompaniment to applesauce. The kids loved them that way!

Rhonda, I've made them with ice cream in the middle too. They make a really good ice cream sandwich. And Weight Watchers used to have us fill grahams with sugar free cool whip and then freeze them. Those are good too!

Tracey I am looking forward to the weather cooling off so I can have soup!

Tammy, I have never had beef with noodles but I've seen it a lot lately online. I'm keeping that one in mind. Something Mama did occasionally was to cook a Boston butt and then she'd cook noodles in the broth from that. My word it was good!

Talking Turkey: Leftovers That Is!
