Meal Plan for the Seventh Week of Pantry/Freezer Challenge

 


I was absolutely convinced last week would be my very last week doing this challenge.  And then...I was plundering in the freezer for an item and came across a few packages of meat that I know too well have been there quite some time.  I decided to try to do one more week of this challenge and realize now that I could quite possibly go two more weeks.  We shall see.  I'll plan for this week first.

It helps a lot that our weather is going to be mostly cool with some rain.  It suits the sort of things we'll be having this week!

I'm beginning my weekend with leftovers galore.  

Enchiladas, Southwestern Salad. I only have three enchiladas left but I'll boost the salad by adding in corn, beans, crumbled queso fresca cheese, olives.  

Cheeseburgers, Oven Fries.  I made burger buns on Friday and took out a package of ground beef to thaw in the fridge overnight so we could make these Saturday when we got in from Outreach Ministry.  The meat in this meal was purchased in January.  Everything from here on is a pantry/freezer meal, though.

Mongolian Beef Roast, Oriental Vegetable Mix, Rice.  I always end up with a portion of this meat leftover.   I'll no doubt have enough for another meal to go into the freezer.  However, that will be the end of this roast which has been in the freezer a good long while.

Pan Sauteed Pork Chops, Sweet Potato Rounds, Green Peas. I found a packet of two boneless chops that are dated late summer 2024.  

Mama's Swiss Steak, Mashed Potatoes, Green Beans.  Another meat I found that had been well hidden was a two-piece package of shoulder steak.  I figure this cut would respond best to slow cooking,

Black Beans and Yellow Rice, Tortillas, Pineapple Salad.  I really would like to use the last of the boxed black beans.  I think I have two left (8-ounces).  I used to buy yellow rice mix but honestly, I have turmeric on hand and can make my own rice yellow, so why buy it?

Brats, German Potatoes, Sauerkraut

Baking: Cream Cheese Brownies.  I'll use a jar of Nutella that had expired to make the brownies.
