Pantry/Freezer Challenge: Week 3

 


Saturday:  Roasted Chicken Sandwiches.  I took a whole chicken from the freezer to thaw last night.  I put it into the slow cooker this morning, then after it was done put it to crisp and brown in the oven.  Delicious!  This was our supper. John had a sandwich.  I chose to have a piece of bread and sliced chicken, not made into a sandwich.

Chef Salad.  For lunch today we had big bowls of Salad.  I used sliced ham from the freezer along with a variety of vegetable from the fridge.

Sunday:  Pizza not even from home or the freezer.  Meeting at church went later than anyone supposed it might.  I was so hungry I could have chewed nails and Granny' infamous suggestion for lunch after a long morning's work of Rock Soup was sounding beyond tasty and good!  We stopped at Quik Trip on the way home and got a slice of pizza each.  John just had to have a 4-inch sub sandwich, too.  I was plenty satisfied with my pizza.  

Lasagna.  I pulled lasagna from the freezer and popped into the oven. And that's all we had just lasagna.  Remember my lasagna is full of vegetables.  This batch had zucchini, mushrooms, carrots, onions, celery, tomatoes.  It was yummy.

Monday:  I got busy in the kitchen very early and made several things while the oven was hot from making breakfast.  I baked peach muffins (six went into the freezer), baked bread, made a small batch of sausage balls (half went into the freezer), cooked green beans and yellow squash from the fridge, put a chicken breast into the oven with barbecue sauce poured over, put an ear of corn and 2 Twice baked potato halves into the oven, too.  Oh, and I made a peach cobbler, as well!

Tuesday.  Chili.  I was out for lunch with Mama.  John ate a sandwich for his lunch.  I started chili in the slow cooker before leaving home this morning.  Everything was pantry or freezer storage items.

Wednesday:  Leftover BBQ chicken sandwiches, fruit salad, boiled peanuts.  The chicken breast I baked on Monday served the two of us and was so large that I set aside a third of it for another meal.  I heated that today and shredded it with a little extra sauce.  

The melon was a purchase made last week as well as a bit of cantaloupe from Sam's garden.  The peanuts were leftovers from last week's visit to the peach shed.  

Chicken Cobbler, Cranberry Sauce, Slaw.

Thursday:  Spam Sandwiches, tomatoes, cucumbers.  That was my last can of Spam.  I will need to add that to my stock up list.

Brenda's Slow Cooker Sausage Dinner, Squash, Green Beans, Peach Cobbler.  This is an easy slow cooker meal with the benefit that you can have it on the table in about 3 hours' time.  Sliced potatoes and onions, cheese, smoked sausage.  Brenda added peas to hers and I would have but I'm OUT of peas...Also needs to go on my list!   The squash, beans, Peach Cobbler were all leftovers from this week.

Friday:  John bought takeout for lunch.  As I was leaving today to go into town, he handed me money and said, "Buy something for lunch.  Doesn't matter what, just whatever you want."   I decided on Chinese and opted for the lunch plate.  I was pleased to bring change home to him.

Southwestern Bean Soup, cheese and crackers.  I've had the soup in the freezer for a little while now.  Since we had a heavier lunch, I thought soup for supper would be nice, especially since it has cooled off again.  If John wants a little something more, I'll make quesadillas, but I doubt he will want anything heavier.
