Meal Plans for the First Week of November

 


I think I would benefit from a breakfast plan.  The truth is that usually when I get up, John is ready to eat right away.  I haven't even had coffee, and with no plan, I'm often at a loss what to make.  If I get a plan figured out, I can at least have an idea of what I can do a day ahead to ease my passage, right?  Well, that's the idea anyway.

Lunch seems to be a less tense time.  John would prefer sandwiches, but reality is that we eat leftovers fairly often, too.  


Breakfasts

Bagels with cream cheese and ham

Breakfast Sandwich: Bacon, Egg, and Cheese

Grits, Smoked Sausage, Toast

Oatmeal Pancakes, Bacon

Eggs and Toast

Toast

Omelets, Biscuits

Suppers

Pizza, Salad

Whole Roasted Chicken, Rice, Peas, Waldorf Salad.  I plan to have leftovers of this chicken at least twice this week, plus one soup meal.  One of those planned meals will be chicken salad for sandwiches.  

Chicken Spaghetti, Broccoli, Garlic Bread.   This is a recipe that I watched Jennifer make.  She said it was from the Pioneer Woman, so I linked that recipe.  I keep coming across this and it sounds delicious. I am definitely going to half the recipe though.  We do not need a 9x13 pan!

Ropa Vieja, Cuban Black Beans, Corn Relish, Tortillas.  Mandy in the Making posted three crockpot recipes last week and each of them sounded absolutely delicious to me.  But this one her family absolutely raved over.  The roast recipe is at 13:36 and the beans recipe is at 16:39.  I have a smaller piece of roast to make this with but if we have leftovers, I feel sure they will freeze nicely.

Chicken Enchilada Soup, Cornbread, Applesauce Cake. I found two jars of applesauce in the pantry that expired October 2024.  We've eaten most of one, but I figured one spice cake this fall could be an applesauce cake which is always a treat.  I think I'll frost with a Brown Butter frosting.

Meatloaf, Mashed Potatoes, Green Beans, Cornbread Muffins.  I'll make half the cornbread batter into muffins for this meal.

Fried Pork Cutlets, Mac and Cheese, Collard Greens.

Your meal plans all sound so yummy! The roasted chicken with the spinoff meals will be very good. The Farmer prepares his own breakfast. It bothered me at first, as I felt I should prepare his meal for him. He is an accomplished cook and knows how he wants his breakfast prepared. He goes to a lot more trouble than I do with mine. We eat a late lunch and then snack, pickety-bits, around 4:30. I had popcorn tonight while we watched Basil Rathbone in Sherlock on YouTube.

Good for you on the meal planning. We have trouble figuring out supper let alone 3 meals a day. I’m still working so I pack my lunch the night before. Then I can just grab out of the fridge and go. Hubby(retired )has started to eat around 10:00 am instead of early breakfast with me and the lunch. Sue in Mn

John can make his own breakfast and lunch but he claims that whatever I make looks so much better than what he made that he'll just wait on me to fix the meals. Well it's true! I'm not going to settle for a pbj...lol

Karla, It's been hit and miss so far. Not so keen on the Pioneer Woman Chicken Spaghetti. I probably won't make that again. The Ropa Vieja though was awesome and I was happy to have leftovers to go into the freezer for a future meal or two!
