Meals for the Second Week of November



We came into this weekend with leftovers:

Corn Relish

Meatloaf (about four servings)

1 cup of mashed potatoes


2 tortillas

Corn Bread

Chicken Spaghetti

and two things I didn't use last week but decided to use for weekend meals:

Cheesy Broccoli Rice and Chicken Casserole 

Pork Chops

I'm going to start by sharing what we ate on Friday evening and then will give you meal plans for seven days after that.

Friday evening: Chicken Spaghetti, Green Peas, Pear Salad, Corn Bread 

Saturday evening: Fried Pork Chops, Steamed Broccoli, Mashed Potato Cakes, Biscuits

Sunday dinner: Cheesy Broccoli Rice and Chicken Casserole, Green Salad, Leftover Biscuits

Sunday evening: we'll likely eat the meatloaf and corn relish.

The rest of these meals will appear in some order but not necessarily in the order given.  I know I need to purchase potatoes and a few other items and some of these meals will be dependent upon my purchases.

Lazy Day Beef Stew, Fruit Salad, Mayonnaise Muffins or Corn Muffins.  I have a can of expired tomato soup to use up and this stew will be perfect for that.  I haven't made this easy oven stew (works good in slow cooker too) in ages and ages.   

Spaghetti with Meat Sauce, Green Salad, Garlic Bread.  Last week John saw the spaghetti on the counter, herd the word spaghetti and thought I was making that for dinner.  Oh, the look on his face when he realized it was Chicken Spaghetti!  He was a sport to try it and to eat the leftovers, too, so this is my 'make-up' meal for him.  I have two jars of frozen homemade sauce in the freezer.

Brats with Cabbage and Pierogi, Rye Bread, Applesauce Cake.  Should be the last of our applesauce cake.  If it happens the cake is gone, I'm thinking I want Gingerbread, so I'll be baking that this week. 

Chilaquiles, Black Beans, Salad.  I used to make this back when Katie lived at home, and it was absolutely delicious. I stopped making it after she left home and John was still working.  Jorge Cruise shared a variation of this recipe as a healthy makeover years ago.  I'm going to make it from 'memory' which means my version will be somewhat like his.  I can't find a copy of the original recipe to share with you, but no eggs are involved in this recipe.  What was in the recipe was cream cheese (preferably low fat but I'll use what I have) and ground meat. 

I'll use another box of the black beans...I've nearly worked my way through the last case.  I have to share though that a few boxes of them had begun to bulge, so I tossed those.   I'll eat expired foods but not 'iffy' ones!

Leftovers? We'll probably have leftovers of some sort, so we'll eat those at our lunch hour.  I know we'll be out at least one evening and John may be out another, so I've likely planned quite enough meals for the week already.

We enjoyed tomato soup and grilled cheese sandwiches this evening. It is one of Greg's favorite meals. Tonight we had fresh-baked sourdough for the sandwiches, which was delightful.
For tomorrow, I'm going to make a bolognese recipe I saw recently, and we'll probably have cheese ravioli with it. The rest of the week will include chicken broccoli rice casserole, pork fried rice with eggrolls, and meatloaf.
