Although I will utilize things from the pantry and freezers, here just at first, I wanted to make sure I used things that were fading fast in the fridge. Much of what I have will keep for a good bit yet, but a few things need to be used up. So, I tried to begin by utilizing those things rather than let them spoil.
I'll share what we made for lunches and suppers for the most part.
Here's what we ate this week:
Saturday: PBJs and chips, plums
Leftover Feta Dump Bake. Last week Katie mentioned I might sub in canned tomatoes when I said I was going to buy cherry tomatoes. Quite right! Chicken was from freezer. I bought the Feta earlier in the month when they had a really good BOGO sale on it. I put several packets in the freezer. Today I added an ounce or so of cream cheese left in a packet and the last of the can of tomatoes I'd opened to make the dish on Thursday.
Sunday: Ribs (purchased), Baked Beans, Homemade Pickles. Baked Beans from pantry, pickles courtesy of Sam.
Crackers and Cheese with Cantaloupe (me). Can't remember what John ate.
Monday: Leftover pizza (homemade) from Friday night, small salads using produce in the fridge.
Pork Loin roast with rosemary and garlic, Baked potatoes, asparagus. I save out a portion of asparagus to have tonight. And the potatoes were spoiling quicker than I could use them, so I baked all four. We had the two smaller ones as baked potatoes tonight. I split and stuffed the other two to make twice baked potatoes. That netted me four halves to put into the freezer.
Tuesday: out to lunch with friends
BLTs with chips. I used the produce I had on hand.
Wednesday: Chicken Taquitos, a blend of rice, beans, corn and salsa from the freezer. I added the rest of the can of kidney beans I'd stored in the fridge, as well as the last of a jar of salsa.
There's enough of this left to make another meal for us, either a lunch or supper, this week.
Mock Chow Mein, Pickled Fresh Vegetables. The entree was from the freezer. I'd made it back in April, and I'd forgotten to add mushroom and celery soups to the mixture. Tonight, I added some chopped mushrooms that are starting to go south as well as half a can of each soup. The remaining soup went into the freezer to use another day.
For the salad, I sliced the rest of the English cucumber, which is the oldest cucumber in the fridge, one third of a red bell pepper and half a carrot. I mixed a lightly sweet vinaigrette. I used soy sauce, olive oil, white balsamic vinegar, a spoon of brown sugar and added powdered ginger and chili pepper flakes for some heat. I would normally have used rice wine vinegar but was out and recalled I had the white balsamic vinegar on hand. It was a good substitute.
Thursday: Leftover Taquitos with Rice and Beans
Lemon Greek Chicken and Potatoes, cucumber and tomato salad, Greek Romaine Salad with Lemon Vinaigrette, Whole Wheat Pita bread. Chicken from freezer, cucumbers from Sam, homemade vinaigrette using on hand items, pita from freezer.
Friday: Pork Loin Roast sandwiches, Pickles. (Pickles were some we had on hand in the fridge that were purchased.)
Air fried frozen chicken filets and fries. (from freezer)
Other:
I took the last of the blueberries Sam had given me and used them in cereal one morning, but I still had about 1.5 cups left. I made a dozen blueberry muffins out of those. I put 9 into the freezer.
I made bread early one morning.
I used the last two peaches to make Peach Pancakes for breakfast on Wednesday morning. I put six pancakes into the freezer.
While sorting through the freezer, I found 2 banana pops I'd made which had gotten buried. We had those for a snack one afternoon.
I used lemons to make lemonade one afternoon. One was just turning soft, and it seemed a good idea to go ahead and use them.
For months now I've been saving lemon halves that I've used in drinks and such. I plan to make cleaning vinegar with them.
I Have steadfastly refused to go to any grocery and pick up any item, even on sale. I am not forgoing shopping for food, but I see no point in buying anything that is not going to allow me to stock up and this week there just are no such sales ongoing.
