This Week In My Home: Better and Better



 No worries ladies, I'm fine.  Really.  Remember when I said I was lightening up on myself?  Well I did.  I had a very busy week, full of lots of normal day to day sorts of activities and two days out (ate out both times, but navigated it very well).  I was tired.  I didn't feel good the first part of the week but I made it through and was only slightly snarky yesterday as a result.  No head for blogging at all, and I'm sorry for that but each time I came here I sat and sat before the blank page and there was nothing.  Nada.  So I gave up and went away.  I read.  I looked at too many diabetic friendly recipes.  I worked hard.  I went over Pinterest more than the usual number of times.  I  played in the kitchen.

And what did I have for all that lightening up I said I meant to do last week?  A pretty good week overall.  Steadily decreasing numbers.  Confidence.  Revelation.  A lighter closet.  A heavier debt load.  A fresh pedicure.

I'll share all about those things later.  I promise.  In the meantime, let's get on with this week's meal plan.



Peanut Butter toast with Peach Slices.
This is fast becoming my favorite Shabat morning ritual: having two thin slices of good toasted bread with peanut butter.  This morning, I topped it with fresh peach slices, a suggestion I tried in my Weight Watchers days and found more than tasty.  I look forward to peach season and this breakfast treat each year.
Stuffed Peppers, Cauliflower Cheese, Corn on Cob, Banana Cream Pie with Walnut Crumb Crust
I stuffed the bell peppers (which were so beautiful this past week at Aldi) with the usual hamburger mix, but subbed finely minced cauliflower for rice and plain tomato sauce for the tomato soup I'd typically have used.  Yum.  The Cauliflower dish was only used another portion of the beautiful cauliflower I'd purchased this past week.  I did a sort of light and easy take on my Penpal's dish.  One winter day I mean to make it properly the way she does, but it was a nice substitute for mac and cheese today.  And I can see why adding cauliflower to the mac and cheese would be a great idea, as one recipe suggested.  The pie was sugar free banana cream pudding, a graham crust without added sugar mixed with crushed walnuts and a sliced banana.  It made a small pie and four servings total.

Zucchini Lasagna, Salad
Cheese Sandwich, Grapes, Milk

Pancake with Peaches and Cottage Cheese
BBQ Chicken Sandwiches, Corn on Cob, Summer Slaw, Banana Cream Pie
Summer Slaw is just a bright fresh slaw that has fresh shredded cabbage, fresh diced tomato and bell pepper in it.  If I could eat cucumber I'd dice one of those up and add to.  Cucumbers don't like me.
Taco Salad, Cherries

Tomato Poached Egg Stacks, Grits
Spinach Stuffed Chicken Breasts, Mashed Potatoes, Italian Flat Beans
Turkey Swiss Roll Ups with Salsa, Strawberry Yogurt Freezer Treats
The freezer treats just have three ingredients: crushed strawberries and plain non-fat Greek yogurt.  This mixture is spread between two squares of graham crackers.  It's low carb and sounds like a lovely 'ice cream' sort of dessert to me.

Bran Flakes, Peach, Yogurt
Picadillo, Brown Rice, Green Salad
Broccoli Cheese Soup, Crackers, Apple
I haven't made Picadillo in years.  It's a Cuban dish I believe and is super flavorful.  I found the recipe in one of my cookbooks and thought I'd give it a try once again.  You can serve in tortillas as well and if I stumble on some corn tortillas I might well do that.

Blueberry Oatmeal Muffins, Omelet
Orange Beef, Steamed Broccoli, Egg Rolls
Who knew my homemade baked egg rolls were  low carb and a perfectly good side dish?  I mean to buy egg roll wrappers this week. Lots of oranges in the fruit bowl, so I'll use fresh ones.
Broiled Hamburger, Tossed Salad, Banana Smoothie


Toasted Blueberry Oatmeal Muffins, Scrambled Eggs with Cream Cheese and Chives
Fat Free Beef Corn Dogs, Oven Fries, Coleslaw
I will use my yogurt based corn meal batter to dip the hot dogs and bake in the oven.
Southwestern Chicken Salad, Peaches


This Week In My Home


I didn't get to one task on my list last week:  Pantry and Freezer inventory.  That tops my list this week...I mean to write the dates on the tops of the cans in the pantry so I can SEE them without peering so hard.

Rearrange Booth:  When I was in last week I noted that the booth was very full looking.  I think I should dust and rearrange, though, since it's been set up since very early May.  I do have a handful of new items to add if I can make the space.  I may pull out some of the items that have been there a while, too, just to freshen the look up a bit.

Grocery Run:  I mean to do this early Monday morning...There are a few things I want from the store in the next town, nothing I couldn't live without but I would like to stock up on chicken and turkey sausage once again, since I'm getting low.

Mop floors.

Daily Routine Work.

Thrift Store Run...This is as much for the fun of it as to look for new stock.  I have at least two shops I try to visit monthly that I haven't been to in three months, and since I didn't have to pay rent this month I have money I can spend on new stock.

Your menu sounds really good.
I love the freezer desert [strawberry one].. I also do a really low cal/low sugar one, that is tasty in this hot summer weather. You take sugar free cool whip [choose any flavor, such as strawberry or chocolate or plain].Put a pretty thick layer between your 2 graham crackers.. Put in dish and freeze.. [ I make a big pan of them, once frozen , put in a zip lock bag and you have a good frozen treat, to cool you off.. I have also added different fruits to these.. yummy.

I am glad to hear that you are doing well!

One thought from my own weight loss journey is that as my abdominal shape changed I actually went back up to larger pants for a bit and really regretted getting rid of everything so hastily. Just a thought. Our son in law experienced the same thing a few years ago.

Your menus look great! The heat has made me not care one bit whether we eat or not but cooking must be done. I have shopped pretty much exclusively at Aldi all summer just because I can make one stop and be done and I really wanted a break from deal chasing. But, I do need to get to the peach stand too before this bit of summer is past.
I want to can some, too.

Have you considered using raw sugar? It has much less impact on blood sugar than processed sugar. I love the taste of it. I buy Sugar in the Raw.

It is a challenge keeping a wardrobe nice on a budget especially if your size changes. I purchase most of my clothes from belks. I buy at the end of the season when they have an extra 50% off clearance prices. My target price for new is $12 or less for jeans/pants and $10 or less for tops/sweaters, the cheaper the better. I can usually find nice brands that hold up for reasonable prices. It just takes time to watch the paper for sales and to look at prices and try on stuff. If the price is good, and close to my size i try it on. I also try to buy neutrals that i can layer and wear all seasons. I also am not opposed to buying sweaters in summer and shorts in winter. Goodwill on bass road in macon also has good prices for new to me and usually has a nice selection of quality brands if you have time to weed through the junk. I try to look at the clearance rack frequently and replace items as i find them. It is seem like if i dont do that then every category wears out at the same time and i have to settle for less and spend more. I am glad you are doing better. Hope your energy returns and you can enjoy buying some new wardrobe pieces to fit your new figure. Take care, Kip
