Meal Plan for October, Week 2

 


Last week's menu plan proved to be difficult.  I was missing a few ingredients, but didn't realize it at the time I was planning.  I kept switching up the plans, meals stretched further than I thought they might, one meal was prepared but not enough for the number of people who'd be here, so that required a second thought.  

To be honest, this week I come to meal planning with planning fatigue, but not just because of last week.  I've been working on the Budget Meals Challenge I set myself.  Figuring out those meals plus last week's changes has just bogged my thinking down.


I'll tell more about the challenge later this week but for now, let me wrestle this meal plan down.

I do have one advantage coming into this week:  I've just done the freezer inventory, and I do know exactly what I have on hand.  I still want to use up those things that have gotten older, same as I want to use things that are expired or about to expire in the pantry.

Homemade Veggie Pizza, Giardiniera

Roasted Chicken, Sweet Potatoes, Green Peas 

Cabbage Rolls, Mashed Potatoes, Green Beans

Sausage and Black Bean Soup, Mexican Cornbread Muffins

Beef Fajitas, Mexican Rice, Black Beans, Green Salad, Tortillas

Chicken (leftover), Dressing, Green Bean Casserole, Cranberry Sauce

Fajita Burritos (Leftovers)

I think I'm in meal planning fatigue as well. It just gets tiresome.

I do watch Lisa on you tube. I've also got a sweetened condensed milk recipe that calls for dry powdered milk.
