Simple Holiday Meals: Second Week of December 2024



My goal this week is to continue having simpler meals.  If they don't sound so simple I assure you they are.  I've got at least two entrees in the freezer already and the rest are truly simple to make.  My biggest goal this week is not to generate lots of leftovers.  I've got so much stuff in the freezer already to use up that is already made.  

Butternut Squash Ravioli with Creamy Sausage and Spinach, Crusty Bread, Pistachio Parfaits.  I've had this butternut squash ravioli in the fridge now for a couple of weeks.  It's still within its best buy date (I always find that worrisome with something that is supposed to be fresh).  I've had this recipe in mind for as long as I've had that ravioli.  

Pot Roast with Vegetables, Cornbread Muffins, Baked Apples.  An easy slow cookier meal...I'll bake apples and muffins in the same muffin pan.  Any leftovers of the pot roast, broth, etc., will be used to make the vegetable beef soup later this week.

Corn Moussaka, Green Salad.   I have a two-serving portion of this in the freezer.  I'll keep it easy with a salad as a side.  I may add some sort of bread to go along with this.  

Easy Chicken Parmesan, Steamed Broccoli, Garlic Bread.  I have some thin sliced chicken breasts in the freezer.  I thought I'd just do a quick pan fry then put sauce and pasta in the skillet with the chicken and some grated cheese.

Mexican Lasagna, Corn, Salad.  Something I put in the freezer last month to use up leftovers. 

Vegetable Beef Soup, Cornbread.  I haven't had just good old vegetable soup in the longest amount of time.  Our weather continues to be cool and it's supposed to rain towards the end of the week.  I think a soup supper will hit the spot.

Chicken and Waffles, Hot Cocoa. I'll use a second package of those thin breasts to fry to go with waffles for supper this night.

I have 2 crockpot meals for this week as well - Smothered Pork Chops which I'll serve over egg noodles and a veggie along side and Beef Pepper Steak with rice. Last night was what we call Gringo Chicken Enchiladas, Baked Potatoes was lunch yesterday. I also have fish tacos, salmon and veggies and a green chili chicken dish I'm not 100% sure I'll make. We also have veggie burgers and spicy chicken patties with onion rings and sweet potato fries available for a quick dinner. I'll be solo on Tuesday night so I'll likely just have soup or something.
